Ironbound Farm is a 108-acre regenerative farm in the New Jersey Highlands, built around a belief that a stronger local food system begins with connection. What started as a cider company has evolved into something much larger—a working farm, gathering place, and growing network of farmers, makers, and producers working together across the region. Rather than looking at each piece independently, Ironbound sees them as part of one interconnected system.

Across the farm, that philosophy is everywhere. Heritage cider orchards—including one of the East Coast’s largest plantings of Newark’s historic Harrison apple—share the landscape with crops and grazing animals. Ingredients grown and raised here make their way onto the Ciderhouse menu, while partnerships with nearby farms and producers bring even more of the region to the table. What’s grown, raised, made, and served are all connected, giving visitors a firsthand look at the larger story of local agriculture.

BEHIND IRONBOUND

Meet founder Charles Rosen—and the vision behind Ironbound’s evolving story.

Behind that vision is founder Charles Rosen, whose path to farming was anything but traditional. An attorney, filmmaker, entrepreneur, and former advertising executive, Charles eventually turned his attention to building something different—a business where agriculture, environmental stewardship, and economic opportunity could work together. What began with a fascination with New Jersey’s cider history has grown into a much larger vision for strengthening the regional food system.

That perspective eventually drew him deeper into New Jersey agriculture, where the possibilities extended far beyond the orchard. At Ironbound, Charles has brought together farming, food, hospitality, and entrepreneurship to build a business that reaches well beyond the farm itself. For him, the measure of success isn’t simply what Ironbound can produce or grow, but what it can create around it—new opportunities for farmers and producers, stronger connections across the regional food system, and a model that continues to evolve with every new partnership.

FROM ORCHARD TO GLASS

Cider is at the heart of it all. Ironbound’s orchards are planted with a diverse collection of apple varieties grown specifically for its ciders, with more than 10,000 trees eventually reaching the carrying capacity of the land. Beyond its own orchards, Ironbound works with a network of farm partners to expand the harvest while supporting regional growers. The ciders are crafted without any added sugars, preservatives, or lab-produced “natural” flavors.


And then there’s the Ciderhouse, the part of Ironbound you can taste. The menu changes with the seasons, bringing together ingredients grown and raised on the farm with those sourced from its network of local farmers and producers. Wood-fired dishes, farm-raised meats, seasonal vegetables, house-made specialties, and, of course, Ironbound’s ciders bring the farm directly to the table.

Beyond the menu, weekends at Ironbound unfold across the farm, from brunch and live music to evenings by the fire pits. The Farm Market offers another look at what’s being grown and produced here, with fresh produce, pastured meats, packaged ciders, and goods from partner farms. Settle in around the fire, share a meal, explore the ciders, wines, and cider-based cocktails, and experience the connection from farm to table in a way that feels relaxed, generous, and distinctly Ironbound.

There’s something elemental about cooking over fire. At Ironbound, Chef Gunner (named the “Fuochista” – the Master of the Fire – by famed chef Lidia Bastianich) brings that experience outdoors, working over the Mother Fire as smoke, flame, and the season shape what comes off the grill. It’s the Ciderhouse at its most relaxed—wood-fired food, cider in hand, and the unmistakable energy that comes from gathering around an open flame.

Ironbound’s wood-fired pizzas bring the farm into every slice, pairing a blistered, fire-kissed crust with seasonal ingredients and flavors that shift with what’s growing, being harvested, and inspiring the kitchen.


At Ironbound, everything begins with the land. After an early orchard struggled in depleted soil, the focus shifted to rebuilding what was beneath it—planting cover crops, improving water management, restoring the soil, and eventually replanting the orchard. Today, orchards, rows of tomatoes, sunflower fields, and gardens filled with flowers and seasonal produce stretch across the farm. Together, they offer a beautiful look at regenerative agriculture in practice—where restoring the soil shapes everything that grows from it.



Beneath every glass poured and dish served lies a vast network of local hands—farmers, bakers, and artisans who all share in the farm's momentum. Ironbound operates on the simple truth that resilience comes from inter-connectedness, not isolation. When you remove the middlemen and champion the individual maker, you do more than support local food; you cultivate a thriving, self-sustaining ecosystem that belongs to everyone at the table.
